Getting to the Root

The Kitchen Vixen is our weekly recipe contributor. This week she offers a great vegetable recipe. This recipe can be used as a side, on top of salads, and much more!


Sweet Roasted Root Vegetables with Walnuts & Beet Greens

Who doesn't love baked apples or baked sweet potatoes? But who would've thought about baking them together? Well, I did, but only because I wanted to try something different other than the typical savory combination of herb laced roasted root vegetables such as potatoes, carrots and onions.

For this recipe I decided to use sweet potatoes instead of fingerlings or red potatoes which I typically use. I also decided to complement the sweet potatoes with some sweet red onions instead of the more common yellow onions. And then I thought, "Tart granny smith apples might make a nice contrast to the already prevalent sweet taste." OMG, these are the best roasted root vegetables I have ever tasted.

Kicking the Craving Habit

The Kitchen Vixen is our weekly 'healthy recipes for runners,' blogger. This week she discusses food cravings, and how to kick the habit for bad ones. She shares three healthy snack recipes that you can cook to replace bad cravings.


We have all been plagued by food cravings at some point in our lives. We can't help it, we're born to crave. It's part of survival. At birth we crave sweet because mother's milk is sweet, and high in fat, so when we taste sweet, we associate sweetness with energy, both immediate and stored fuel. But even when we are old enough to make more cognizant choices, often times those inherent tendencies kick in, especially during times of stress. If we are stressed, either because of a deadline, because we skipped a meal or because we exercised and didn't eat enough, our survival mechanisms will kick in and we reach for quick-fix sugar sources to feed our brain, and high fat foods to provide long-term storage. We also grab for fatty foods because their texture offers a soothing mouth-feel that is learned. High fat foods are high on the hedonic, "pleasure seeking" food scale.
